Sour Cream turned into a liquid?

We bought a sour cream at the SuperMarket and we've refrigerated it for a week, and we used it. It wasn't just liquid on the top like normal though. I went to stir it, and it spilled everywhere. It was so liquidly you could drink it like milk almost. What can we do to stop this from happening again?Sour Cream turned into a liquid?
Commercial sour cream gets its characteristic tang from the lactic acid created by the bacteria. As it ages, more lactic acid is produced and break down the fat, which causes it to turn into a liquid. If you buy light sour cream it is usually thickened with stabilizers. Here are some tips to keep your sour cream in best condition for consumption:





鈥?Although sealed sour cream may be stored up to two weeks beyond the sell-by date, it will lose flavor as it ages.





鈥?Sour cream should always be kept refrigerated.





鈥?Do not use the carton as a serving container. Remove what you need and return the carton to the refrigerator immediately.





鈥?You may notice some liquid separation in sour cream after opening. You can either pour off the liquid or stir it back in.





鈥?Pink or green scum is an indicator of spoilage. Toss it out.





鈥?Before adding to any hot liquid, bring sour cream to room temperature.





鈥?Sour cream used as a thickener for hot sauces can easily curdle if the temperature is too high. Remove the food from the heat before stirring in the sour cream or add it during a very low simmer.





鈥?Add 1 tablespoon of flour to 1/2 cup of sour cream used as a thickener to discourage curdling.

I'll tell you exactly why it does that. You are using a metal spoon to take some out. Is that correct. Well, for some reason when you use a metal spoon it makes it soupy. Use a plastic or wooden spoon instead and it won't do that anymore.
Man I hate that when it happens. 1st thing I do is to make sure that the sour cream is still within the use best by date. Normally, if we don't use our sour cream real often it will form the liquid on top. So I just stir it up really while and normally it will return to the perfect mixture.
Well just stop buying that brand most brands don't do that
