I've been told that ice cream made with liquid nitrogen is supposedly better then the original stuff, but does anyone know why?What makes liquid nitrogen ice cream better than other ice cream? ?
I think its colder and more frozen so maybe since its really really cold it some how makes it taste really really good?What makes liquid nitrogen ice cream better than other ice cream? ?
I am just guessing because i haven't tried one yet. The original ice cream is made by stirring it and creating bubbles of air that might change the taste and flavor of the mixture because it takes longer to hardened or freeze from liquid form. In nitrogen the freezing is much faster and less air bubbles are in the ice cream. Just a thought :)
I've made liquid nitrogen ice cream a few times and the difference is not that great I think. My kids and their friends love it though. I think the reason it is frozen much, much faster than conventional ice cream. I can make a quart in just a few minutes. There is less air and less crystals in the ice cream.
Since liquid nitrogen is the best substance for cooling things to the level of -200 degree centigrade, so naturally properly cooled ice cream will have the better taste than others.
