Liquid Nitrogen Ice Cream?

i want to make ice cream using liquid nitrogen. can you do so with a recipe that uses eggs like normal ice cream does? this recipe calls for boiling heavy cream, sugar, and chocolate...whiskings eggs...pouring cooked milk mixture in with the eggs and then cooking the mixture in low heat....add more heavy cream and vanilla...refrigerating it for a couple hours....this cooled mixture then usually goes in an ice cream maker but do u think i could use liquid nitrogen instead?!?!?!?

Kanman, people use liquid nitrogen to make ice cream all the time. It produces an extremely smooth textured ice cream because the grains formed are so small.





To the asker: Go for it. I don't see what difference the recipe makes. If that recipe works in an ice cream maker it should work with the liquid nitrogen too. I'm not sure how best to introduce the nitrogen. Probably add it slowly whist quickly whisking the mixture.Liquid Nitrogen Ice Cream?
my guess is the liquid nitorgen will freeze the mixture far too quickly for the ice cystals to be properly distributed. Be careful you don't get burned by the nitro and let me know how it comes out.
It should work, but it might be extra dense and harder to stir once it gets cold . Sounds yummy!
most of the cooks here are not science geeks, so I would say try it and find out. The recipe sounds very similar to Dippin' Dots. I would think it might be easier to eat if your mixture was in very small bits like the dots, so experiment and let us know what you find out.
