When making ice cream why does the liquid ice cream expand when cooled?

Milk has a lot of water in it, so as water forms a crystalline structure when it freezes, it expands, therefore your ice cream expands =)





Casey's comment is incorrect.. water is an exception. Few liquids expand when frozen.When making ice cream why does the liquid ice cream expand when cooled?
